Loaf Ingredients: 1lb package of Crummies, Cooking Oil of your choosing, 1 can Chickpeas (drained and rinsed), 1.5 cups of Breadcrumbs (GF breadcrumbs work also), 2TBLSP ground flaxeed, 3 TBLSP Nutritional Yeast, 2 TBLSP Soy Sauce, 1.5-1 cup Vegetable Stock, .5 TBLSP Vegetable Bouillon, Wax paper, Tin foil.
Gravy Ingredients: 2 medium Onions (chopped), Cooking Oil of your choosing, 1 TBLSP Cornstarch or arrowroot, 1 TBLSP Nutritional Yeast, 2 TBLSP Soy Sauce, 2 cups Vegetable Stock.
For the Loaf
Step 1-Thaw your Crummies
Step 2-Preheat oven to 375 degrees Fahrenheit.
Step 3- Heat up 1-2 tsps. of cooking oil and sauté your Crummies, stirring frequently for about 5 minutes, then set aside to cool for 15-20 minutes
Step 4- Drain and Rinse your Chickpeas and place in large mixing bowl. Crush the chickpeas with a fork or potato masher until crushed but not completely obliterated. You do want some texture on them.
Step 5-Combine all other ingredients in the same mixing bowl.
Step 6- Mix all the ingredients together and add more veggie stock if needed, be careful not to get too wet. The consistency should be firm but pliable.
Step 7- Line the bottom of your loaf pan with wax paper, I traced it out first and cut it to size, pretty fancy I know:)
Step 8-Press mixture into loaf pan as evenly as possible, making sure the sides and middle are a nice flat surface, well flattish, as this will have some texture to it.
Step 9-Cover with Tin foil and cook for 45 minutes. Remove Tin foil and bake for an additional 20 minutes. Remove from oven and let sit in loaf pan for at least 15 minutes. Turn over on serving platter, remove wax paper and serve hot. The Vegan gravy below is an excellent addition.
Now for the Gravy
Step 1-Sautee your chopped onions over med to low heat, until a deep golden brown
Step 2-Add your onions and all additional ingredients into a blender and blend vigorously for about 3 minutes. Making sure all elements are well blended.
Step 3- Use a fine mesh strainer to strain the mixture back into a bowl or sauce pan, discard the goopy leave behinds, unless you have another use for them.
Step 4- Over Med Heat, begin to thicken your gravy to desired thickness by adding .5 tsps. of additional corn starch, stirring constantly. Remove from heat and serve.
