Roasted Red Pepper Hummus

Topping: 1 Red Bell Pepper, ¼ lb thawed Crummies, Olive oil (enough to sautee the peppers)
Crummus: 1-15oz can of Chickpeas or Garbonzo beans-drained, 2 Garlic Cloves, ¼ Cup Tahini, 2 TBLSP Olive Oil, 3 TBLSP Water, ¼ Cup Lemon Juice, Salt and Pepper, ½ TSP Cumin.

Step 1-Thaw your Crummies

Step 2-Chop the Bell Pepper and sautee with oil at high heat. You want a little char on these but don’t overdue it.

Step 3- Once they have the desired consitency, add in the ¼ Cup of Crummies and continue to Sautee until all is heated through and set aside to cool.

Now for the Fun Part

Step 4- Add the remainder of the ingredients into the food processor and let it blend for 1-2 minutes. If not the desired consitency, add in more water, 1TBLSP at a time.

Step 5-Put the Crummus in a bowl and drizzle with olive oil if you wish.

Step 6-Put the cooled topping onto the mixture and Enjoy. This is excellent served with warm pita bread or carrots. I also topped with some pickled red onions, but any garnish is welcome.
